These are for when you want a cookie but also want protein involved. Banana, peanut butter, chocolate… you get the idea.
Ingredients
- ½ cup vanilla protein powder (we used rBGH Whey Protein Isolate in Cacao flavor) a plant based protein works too!
- 3 tbsp oats
- 4 tbsp peanut butter
- 2 tbsp maple syrup
- 2 tbsp almond milk
- 1 tbsp vanilla extract
- ¼ tsp baking powder
- ¼ banana, diced
- 1–2 tbsp chopped walnuts
- 3–4 squares high-quality baking chocolate, roughly chopped
Instructions
- Preheat oven to 350°F.
- In a bowl, mix protein powder, oats, and baking powder.
- Stir in peanut butter, maple syrup, almond milk, and vanilla until a thick dough forms.
- Fold in banana, walnuts, and chocolate.
- Scoop dough onto a parchment-lined baking sheet and gently flatten.
- Bake 8–10 minutes (slightly soft in the center is perfect).
- Let cool 5 minutes — they firm up as they set.
