Monster Protein Cookie Bars

Think you love candy? Wait until you try our new healthy Monster Protein Cookie Bars. đŸ« They are soft, chewy bars made with our Chocolate Flavored Egg White Protein, and loaded with gluten-free pretzels and dye-free chocolate gems. Need we say more? 😉

Ingredients

Cookie Bar Layer:

  • 1 cup almond flour
  • œ cup (whey, egg white, or pea chocolate flavored protein powder. We used egg white!)
  • ÂŒ cup maple syrup
  • ÂŒ cup nut butter (we used peanut butter)
  • ⅓ cup dairy-free chocolate chips
  • œ cup dye free chocolate gems (we love using UNREAL chocolate)
  • Œ–œ cup crushed pretzels (we used gluten free pretzels)
  • œ tsp vanilla extract
  • ⅛ tsp salt
  • 3–4 tbsp milk, as needed

Chocolate Topping:

  • 3 oz dairy-free chocolate chips
  • 2 tbsp milk

Instructions

  1. Prepare the Cookie Dough
    In a large bowl, mix almond flour, protein powder, maple syrup, SunButter, vanilla, and salt. Add almond milk 1 tbsp at a time until it forms a dough. Fold in chocolate chips, mini M&Ms, and crushed pretzels. Press evenly into a parchment-lined 9×5 loaf pan.

  2. Top with Chocolate
    Melt chocolate chips with coconut milk until smooth. Pour over the chocolate layer and spread. Sprinkle extra M&Ms and pretzel pieces on top if desired.

  3. Chill and Slice
    Refrigerate at least 5 hours until firm. Slice into bars and enjoy.
