Monster Protein Cookie Bars
Think you love candy? Wait until you try our new healthy Monster Protein Cookie Bars. đ« They are soft, chewy bars made with our Chocolate Flavored Egg White Protein, and loaded with gluten-free pretzels and dye-free chocolate gems. Need we say more? đ
Ingredients
Cookie Bar Layer:
- 1 cup almond flour
- œ cup (whey, egg white, or pea chocolate flavored protein powder. We used egg white!)
- Œ cup maple syrup
- Œ cup nut butter (we used peanut butter)
- â cup dairy-free chocolate chips
- œ cup dye free chocolate gems (we love using UNREAL chocolate)
- Œ✠cup crushed pretzels (we used gluten free pretzels)
- œ tsp vanilla extract
- â tsp salt
- 3â4 tbsp milk, as needed
Chocolate Topping:
- 3 oz dairy-free chocolate chips
- 2 tbsp milk

Prepare the Cookie Dough
In a large bowl, mix almond flour, protein powder, maple syrup, SunButter, vanilla, and salt. Add almond milk 1 tbsp at a time until it forms a dough. Fold in chocolate chips, mini M&Ms, and crushed pretzels. Press evenly into a parchment-lined 9Ă5 loaf pan. -
Top with Chocolate
Melt chocolate chips with coconut milk until smooth. Pour over the chocolate layer and spread. Sprinkle extra M&Ms and pretzel pieces on top if desired. -
Chill and Slice
Refrigerate at least 5 hours until firm. Slice into bars and enjoy.
