Girl Scout season is in full swing, and if you're like us, there’s no way a box can sit in our pantry for more than a week. Okay, fine, a few days.
 
But don’t worry—we’ve got a solution. Made with our Whey Protein Isolate Cold-Filtration in TrueFlavor French Vanilla, these easy Samoas mockups taste just like the real deal. Easy, delicious, and packed with protein? Sign us up.

Ingredients:

  • 1 cup pitted dates (softened if possible)
  • 1 scoop Whey Protein Isolate Cold-Filtration in TrueFlavor French Vanilla
  • 1/2 cup unsweetened shredded coconut
  • 2 tbsp coconut oil (melted)
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • 3 oz dark chocolate (melted)
  • Optional: A splash of your choice of milk if the dough is too dry

Instructions:

  1. Make the Dough – Blend the dates, protein powder, coconut oil, vanilla, and salt in a food processor until a thick dough forms. If the mixture is too dry to blend smoothly, add a small splash of milk and blend again. Mix in the shredded coconut.
  2. Shape the Cookies – Roll into small discs and use a straw or your finger to poke a hole in the center for that classic Samoas look.
  3. Dip in Chocolate – Melt the dark chocolate, then dip the bottom of each cookie into it. Drizzle extra chocolate on top.
  4. Chill & Enjoy – Place on parchment paper and refrigerate for 15-20 minutes until set.
