We’ve been on a mint kick lately and chocolate is always a yes, so this just made sense. High protein, low carb, really good. 🌱🍫

Ingredients

  • ½ cup Chocolate Thin Mint Pea Protein Powder (whey works too;)
  • ½ cup almond butter
  • ¼ cup water
  • 2 tbsp maple syrup or honey
  • 1 tsp vanilla extract
  • ½–1 tsp peppermint extract
  • ½ cup dark chocolate chips
  • ½ tbsp coconut oil

Instructions

  • Line a loaf pan with parchment paper.
  • In a bowl, mix: almond butter, water, maple syrup, vanilla. peppermint extract
  • Stir in the protein powder until a dough forms.
    (Add a little more water if needed.)
  • Melt chocolate chips with coconut oil.
  • Mix half of the melted chocolate into the dough.
  • Press mixture evenly into the pan.
  • Pour remaining chocolate on top and spread.
  • Refrigerate for about 1 hour, then slice.
