Quick to make and packed with protein, these Funfetti Protein Bites are a fun way to curb a sweet tooth. Just mix, roll, and chill. Our favorite part? No baking required.
Ingredients:
- 1 cup blanched almond flour
 - 1/2 cup French Vanilla Pea Protein
 - 3 tablespoons maple syrup
 - 1/3 cup almond butter
 - 2–4 tablespoons milk of choice
 - 1/2 teaspoon vanilla extract
 - 1/4 teaspoon almond extract
 - 2–3 tablespoons rainbow sprinkles (naturally colored if preferred)
 - Pinch of salt (optional)
 
Instructions:
- In a medium bowl, combine almond flour, protein powder, and salt.
 - Stir in maple syrup, vanilla extract, and 2 tablespoons milk. Mix until a dough forms. Add more milk 1 teaspoon at a time if the mixture is too dry.
 - Gently fold in sprinkles.
 - Press into a parchment-lined loaf pan and slice into bite sized bars.
 - Chill in the fridge for at least 30 minutes to firm up.
 - Optional: Drizzle with melted white chocolate & top with more sprinkles
