Here's how you make them:
Ingredients:
- ½ cup butter, softened
- ½ cup brown sugar or coconut sugar
- 1 large egg (or flax egg: 1 tbsp flaxseed meal + 3 tbsp water)
- 1 tsp vanilla extract
- 1 cup all-purpose, almond, or oat flour
- ½ cup Whey Protein Isolate (Pea Protein works too)
- ½ tsp baking soda
- ¼ tsp salt
- ½–1 cup chocolate chips (we love HU choco chips or your choice)
Instructions:
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, cream together the butter and sugar until fluffy.
- Add the egg and vanilla, mix well.
- Stir in the flour, protein powder, baking soda, and salt until combined.
- Fold in the chocolate chips.
- Scoop dough into balls, place on baking sheet, and flatten slightly.
- Bake 8–10 minutes, or until edges are lightly golden.
- Let cool on the baking sheet for a few minutes before transferring to a rack.
