We made these Chocolate Strawberry Fudge Protein Bars instead of buying chocolate this year. Yep, no regrets.
Ingredients
- 1 cup natural peanut butter (or almond butter)
- ¼ cup honey or maple syrup
- ¼ cup whey protein powder (chocolate preferred)
- 2 tbsp unsweetened cocoa powder
- 2 tbsp coconut oil, melted
- 2–3 tbsp milk of choice (add slowly)
- ½ tsp vanilla extract
- Pinch of salt
- ¼ cup dried strawberries, chopped
Directions
- Mix peanut butter and honey until smooth.
- Stir in melted coconut oil and vanilla.
- Add cocoa powder, whey protein, and salt. Mix until fully combined.
- Add milk 1 tbsp at a time until the mixture is thick, glossy, and spreadable (think soft fudge).
- Gently fold in dried strawberries.
- Press firmly into a parchment-lined loaf pan.
- Chill 30–45 minutes, slice into bars.
