I just became a vegan. I usually start my morning with a 60 oz shake (bananas, berries, powder protein, pb2, spinach, water, ice, and some kind of sweetener). Lunch is light with a typical salad. And dinner is all out with veggies, legumes or rice, some kind of tofu. I’ll vary it with different dishes of course. Sometimes I’ll eat a whole Kabocha squash.
