Healthy Recipes #6: Gluten-Free Protein Muffins

True Nutrition is back with another healthy snack! Today we are making Gluten-Free Protein Muffins using whey or pea protein and your choice of different fruits. This makes for a delicious addition to your daily diet that packs up to 31.5g of protein per serving!

2/3 cup Whey Protein Isolate or Pea Protein (approx 50g)
5/8 cup Oat Starch (approx 60g)
1/2 cup sugar
3/8 cup gluten-free flour
1/6 cup coconut oil
2 large eggs
1/2 tsp salt
1/2 tsp baking soda

Optional Ingredients:
1 cup blueberries
1 cup diced banana
1 cup chopped walnuts
1 cup diced strawberries
1/2 cup unsweetened applesauce
1 tsp cinnamon
1/2 tsp vanilla extract

Directions: Preheat oven to 350F. Double-boil coconut oil in a separate pot. Mix all desired ingredients in a large mixing bowl, adding additional gluten-free flour to thicken, or a small amount of water to thin (if needed). Spray a lightly oil a muffin pan, and measure desired number of muffins. Bake for 20-minutes, or until golden brown.
