We were inspired by Gen’s journey and worked with her to create this delicious recipe for
Gluten-free Protein Pancakes
“1. 1 scoop protein powder – for my pancakes, I used a custom made blend that I got to hand pick on @truenutrition’s website! Flavor: pumpkin spice.
2. 1 medium banana
3. 1 egg
4. 1tsp Baking powder
For a super smooth mix, add the ingredients to a blender and mix! Or, you can mash up the banana and mix everything with a fork. Because I LOVE vanilla, I also threw in 1 tsp of pure vanilla for some added sweetness 😍 if the mix is a little dry, just add a splash of water. Cook on a frying pan at a medium to low heat and flip when you start to see air bubbles form around the edges. And THAT’S IT! Obviously I topped mine with some more banana, blueberries, syrup and sugar…but let’s be honest, that was more for the aesthetic”
